Satisfy those ramen cravings with this easy, homemade Shiitake Ramen with Highline Shiitake Mushrooms. When sautéed these mushrooms release a deep umami flavor to bring your ramen to the next level.

 4 oz Highline® Shiitake Mushrooms, sliced
 2 cups vegetable stock
 1 tsp ginger paste
 1 clove garlic, minced
 2 tbsp white miso paste
 1 tbsp vegetable oil
 1 tbsp soy sauce
 1 tsp sesame oil
 100 g ramen noodles, cooked according to package instructions
 1 egg, fried
 1 tsp Sriracha
 Parsley, for garnish
 Red Thai Chilis, sliced, for garnish

In a small pot, heat the vegetable stock and add ginger paste and garlic. Mix well. Bring to a boil and simmer for 10 minutes. Whisk in the miso until dissolved.

In another pan heat oil with mushrooms for 3 minutes. Add in sesame oil, soy sauce and cook for 1 more minute.

Add noodles and mushrooms to your broth. Top with a fried egg and garnish with parsley and chilis. Enjoy!
