These plant-based Rosemary Orange Glazed Mushroom Skewers with Highline White Flat Mushrooms are perfect for your next bbq. The zest of orange with fresh herbs gives these skewers a tasty twist. Serve as a main, or a satisfying side dish.

For the skewers
 6 oz Highline White Flat Mushrooms, thinly sliced
 1 bunch of green onions, cut into 2 inch lengths
 Grilling skewers
 Sesame seeds, for serving
For the sauce
 1 orange, zest and juice
 3 tbsp honey
 2 tbsp avocado oil
 2 tbsp soy sauce
 2 tbsp fresh rosemary
 4 cloves garlic, minced
 Salt and pepper to taste
 Chili flakes, to taste

Combine all sauce ingredients in a medium sized bowl, set aside

To assemble skewers, begin with a green onion piece and stack the mushrooms by carefully folding and sliding onto the skewers.
Alternate with a generous stack of mushrooms then a green onion piece to keep the mushrooms intact on the skewer. Don’t be shy with the mushrooms as they do shrink down with cooking.

Once the skewers are assembled, place in a shallow dish and pour the sauce over them. Allow to marinade for at least 20 minutes, up to 2 hours.

Preheat your grill to low heat, 350. Reserve your sauce for basting. Grill your skewers low and slow, turning them often while generously basting them in the process. Grill until golden in color and begin to caramelize.
