Mushroom Penne

Whip up an easy weeknight vegetarian dinner with our Mushroom Penne using Highline Sauté Blend Mushrooms. It is the perfect balance of White, Mini Bella, and Shiitake mushrooms in a homemade marinara sauce.

 6 oz Highline® Sauté Blend Mushrooms
 1 tbsp olive oil
 2 cloves garlic, minced
 2 tbsp tomato paste
 1 can, diced tomatoes
 1 tbsp Italian seasoning
 Salt and pepper, to taste
 10 oz penne, cooked according to package instructions
 1 cup reserved pasta water
 Parmesan cheese, to taste
 Parsley, for garnish

In a medium pan, heat oil on medium heat. Add mushrooms and thyme and sauté for 7 minutes.

In another pan on medium heat add garlic, tomato paste, tomatoes, Italian seasoning, and salt and pepper. Cook for 3 minutes.

Combine penne noodles and sauce with reserved pasta water until you achieve the desired consistency.

Transfer pasta to a plate, top with sautéed mushroom, and Parmesan cheese, and garnish with parsley to enjoy.
