Mushroom & Dijon Puff Pastry Bites

Elevate your appetizers with these vegetarian Mushroom Dijon Puff Pastry Bites. A bite-sized punch of flavors with of a flakey puff pastry, caramelized onions, grainy Dijon mustard, and sautéed Highline Mini Bella Mushrooms.

 16 oz Highline® Mini Bella Mushrooms, sliced
 2 tbsp olive oil, divided
 1 yellow onion, sliced
 ½ tsp garlic, minced
 2 tsp fresh thyme, chopped
 ½ cup Gruyere cheese, shredded
 2 frozen puff pastry, thawed
 1 egg, beaten
 3 tbsp whole-grain Dijon mustard
 Salt and pepper, to taste
 Fresh parsley, for garnish

Preheat oven to 400 F. Line a baking sheet with parchment paper and set aside.

In a large skillet, heat oil over medium heat. Add onions and salt. Sauté onions for 10 minutes until brown and caramelized. Add in mushrooms and sauté until tender for 5 minutes. Add garlic, thyme and pepper. Sauté for an additional minute. Place in a bowl and stir in cheese.

On a floured surface, roll out the puff pastry. Cut pastry into 2-inch circles with a cook cutter. Transfer the puff pastry to the baking sheet and brush with an egg.

Top each pastry with mustard, followed by the mushroom filling.

Bake for 25 minutes until pastry is golden and crisp. Garnish with fresh parsley and serve.
