Grilled Portabella Burgers with Garlic Mayo

These grilled Portabella Burgers are made of juicy Highline Portabella Mushrooms marinated and grilled to perfection. Topped with garlic mayo, these burgers are a flavorful and satisfying plant-based option.

For the burgers:
 6 oz Highline Mushrooms Portabella Grill Caps, stems and gills removed
  cup mayonnaise
 1 tsp chives, chopped
 ¼ tsp garlic powder
 ¼ tsp fine sea salt
 1 small red onion, sliced (keep rings intact)
 4 burger buns 
 4 lettuce leaves
 Olive oil, for grilling
For the marinade:
 2 tsp chili powder
 1 tsp brown sugar
 1 tsp fine sea salt
 1 tsp garlic powder
 1 tsp onion powder
 1 tsp smoked paprika
 ½ tsp ground black pepper
  cup extra virgin olive oil

In a small bowl, mix all marinade ingredients together.

Preheat grill to high heat.
Place mushrooms on baking sheet and drizzle marinade over top.
Gently coat all sides with marinate and let sit for 15 minutes.

In a small bowl, stir together mayonnaise, chives, garlic powder and salt. Refrigerate until ready to serve.

Brush the grill with olive oil. Place mushrooms and onions on grill and cook for 7 minutes on each side until both are tender.

To serve, spread each bun with garlic mayo, top with lettuce, onions, mushrooms, and cover with top bun.
