Grilled Cajun-Style Mushroom Kabobs

Enjoy these Grilled Cajun-Style Mushroom Kabobs for grilling season. Highline White Mushrooms grilled with the freshest vegetables in a Cajun seasoning make the perfect meal for any backyard barbeque.

 16 oz Highline White Mushrooms, stems removed
 1 large green bell pepper, cut into 2 inch pieces
 1 large yellow bell pepper, cut into 2 inch pieces
 1 pint grape tomatoes
 1 small zucchini, cut into 1/2 inch rounds
 ¼ cup olive oil, plus more for grates
 1 tbsp Cajun seasoning
 2 tsp hot sauce
 Long grain rice, optional for serving.

Place mushrooms, peppers, onions, tomatoes and zucchini in large resealable plastic bag. Add oil, Cajun seasoning and hot sauce. Massage mixture into vegetables to cover completely.

Preheat grill to medium heat and brush grates with oil. Remove vegetables from marinade. Set marinade aside for brushing kabobs while grilling.

Thread 8 skewers with mushrooms, peppers, onions and tomatoes, alternating ingredients evenly.

Grill kabobs, flipping occasionally and brushing with reserved lemon mixture, until vegetables are tender, about 8-10 minutes. Serve with rice and enjoy.
