Ingredients:

8 oz Highline® Portabella Mushrooms, stems removed and thickly sliced
Cooking spray

For the base:
1 cup flour
1 tbsp smoked paprika
1 tbsp onion powder
Salt & pepper, to taste

For the egg wash:
1 egg
1 tbsp water

For the bread crumbs:
1 cup panko breadcrumbs
1 tbsp Italian seasoning
2 tbsp Parmesan cheese
Fresh parsley, for garnish
Ranch dip, for serving

Instructions:

  1. Spray air fryer with cooking spray, arrange mushrooms in a single layer, and cook at 380°F for 5 minutes.
  2. In a small bowl mix flour, smoked paprika, garlic powder. Season with salt & pepper, to taste.
  3. In a second bowl whisk eggs and water.
  4. In a third bowl combine breadcrumbs, Italian seasoning, and Parmesan.
  5. Coat each mushroom in flour mixture, followed by the egg wash and then breadcrumbs.
  6. Place breaded mushrooms in the air fryer and cook for 10 minutes at 380°F until golden brown.
  7. To serve add ranch dip and garnish with parsley.
