These Whipped Lemon Goat Cheese & Highline Oyster Mushroom Crostini’s are the perfect impressive appetizer for entertaining and ready in just 15 minutes!

 6 oz Highline® Oyster Mushrooms, sliced
 1 tbsp olive oil
 1 clove garlic, minced
 4 oz goat cheese
 1 tsp lemon juice
 1 baguette, sliced and toasted
 Thyme, for garnish
 Salt and pepper, to taste

Heat oil on medium heat in a medium pan. Add mushrooms and garlic and sauté for 5 minutes.

In a medium bowl, add goat cheese and lemon juice. Whisk together until smooth

To assemble crostini’s, spread whipped goat cheese on toast, top with mushrooms. Garnish with thyme and season with salt and pepper. Enjoy!
