Boost your energy with a delectable Sweet & Spicy Veggie Power Bowl recipe featuring Highline Mini Bella Mushrooms, edamame, and broccoli.

 16 oz Highline Mini Bella Mushrooms
 2 tbsp sesame oil
 2 tbsp olive oil
 ½ yellow onion, finely diced
 8 cloves of garlic, minced and divided
 ½ tsp oregano
 ½ tsp smoked paprika
 ½ tsp chili powder
 ¼ cup tomato paste
 2 ½ tbsp soy sauce
 2 tsp sriracha
 2 tsp maple syrup
 1 cup edamame
 1 head of broccoli, sliced lengthwise
 White rice, for serving
 Sesame seeds, for garnish
 Salt and pepper, to taste

Heat sesame oil in a large saucepan. Sauté onion on medium-low heat until golden brown. Add 3 cloves garlic and sauté for 30 seconds.

Add oregano, smoked paprika, chili powder, and tomato paste. Mix and add soy sauce, sriracha, and maple syrup. Add mushrooms and cook for 5 minutes while continuously stirring.

In a separate skillet, heat 1 tablespoon of olive oil in a skillet. Add 2 cloves of garlic and cook for 1 minute. Add broccoli florets and season with salt and pepper. Add 3 tablespoons of water and cover for 3 minutes. Set aside.

Add remaining oil and garlic to skillet and cook for 1 minute. Add edamame and cook for an additional 2 minutes.

To assemble bowls, add mushrooms rice, broccoli, and edamame to bowl. Garnish with sesame seeds & enjoy!
