Boost your energy with a delectable Sweet & Spicy Veggie Power Bowl recipe featuring Highline Mini Bella Mushrooms, edamame, and broccoli.

 16 oz Highline Mini Bella Mushrooms
 2 tbsp sesame oil
 2 tbsp olive oil
 ½ yellow onion, finely diced
 8 cloves of garlic, minced and divided
 ½ tsp oregano
 ½ tsp smoked paprika
 ½ tsp chili powder
 ¼ cup tomato paste
 2 ½ tbsp soy sauce
 2 tsp sriracha
 2 tsp maple syrup
 1 cup edamame
 1 head of broccoli, sliced lengthwise
 White rice, for serving
 Sesame seeds, for garnish
 Salt and pepper, to taste
  1. Heat sesame oil in a large saucepan. Sauté onion on medium-low heat until golden brown. Add 3 cloves garlic and sauté for 30 seconds.
  2. Add oregano, smoked paprika, chili powder, and tomato paste. Mix and add soy sauce, sriracha, and maple syrup. Add mushrooms and cook for 5 minutes while continuously stirring.
  3. In a separate skillet, heat 1 tablespoon of olive oil in a skillet. Add 2 cloves of garlic and cook for 1 minute. Add broccoli florets and season with salt and pepper. Add 3 tablespoons of water and cover for 3 minutes. Set aside.
  4. Add remaining oil and garlic to skillet and cook for 1 minute. Add edamame and cook for an additional 2 minutes.
  5. To assemble bowls, add mushrooms rice, broccoli, and edamame to bowl. Garnish with sesame seeds & enjoy!
