Mexican Mushroom Breakfast Tostadas

Start your morning right with Mexican Mushroom Breakfast Tostadas with Highline White Mushrooms! Crispy tostadas, smashed avocado, Mexican spiced mushrooms, and a perfect egg on top.

For the tostadas:
 16 oz Highline White Mushrooms, thinly sliced
 2 tbsp avocado oil
 2 cloves of garlic, minced
 1 tbsp butter
 ½ avocado, smashed
 1 lime, juiced
 2 eggs
 2 corn tostadas
 Garlic powder, to taste
 Salt & pepper, to taste
 Cherry tomatoes, diced for garnish
 Chives, for garnish
For the spice mix:
 ¾ tsp salt
 1 tsp Mexican oregano
 1 tsp chili powder
 2 tsp ground cumin
 2 tsp garlic powder
 1 tsp smoked paprika
 Cayenne pepper, to taste

Combine all ingredients to make the spice mix.

Warm avocado oil in a saucepan over low-medium heat. Add garlic, spice mix and sauté for 1 minute. Then add butter & mushrooms and continue to cook for 5 minutes.

Season smashed avocado with salt, half of the lime juice and garlic powder. Set aside.

Preheat pan to medium heat. Crack eggs into the pan and cook until sunny side up. Season with salt & pepper.

To assemble the tostadas spread avocado mixture, add mushrooms, and top with an egg.

Garnish with tomatoes, chives and remaining lime juice.
