 16 oz Highline® White Mushrooms, sliced
 1 ½ cups wild rice
 1 cup chicken broth
 1 bay leaf
 4 slices bacon, cooked and crumbled
 2 tbsp butter
 1 onion, chopped
 2 stalks celery, chopped
 1 tsp dried thyme
 1 tsp fresh sage, chopped
 ½ cup dried cranberries
 1.40 cups Parmesan cheese, grated
 Salt and pepper, to taste
 Parlsey, for garnish

Place wild rice, bay leaf, salt, and pepper into a pot and bring to a boil, cover, and reduce heat. Simmer for 30 minutes.

In a skillet, add butter, onions, mushrooms, celery, thyme and sage. Cook for 5 minutes on medium heat until onions are soft. Add in cooked rice, bacon, cranberries, and Parmesan cheese and stir to combine.

Transfer to a bowl, garnish with parsley and serve.
